At first, I was devastated, but over the years I’ve discovered some delicious non-dairy replacements, one of which allowed me to bake this non-dairy cheesecake!
Why I Avoid Dairy with My IBD
When I was diagnosed with ulcerative colitis in 2014, my GI told me to stay away from dairy.
Dairy can cause inflammation, and since I have inflammatory bowel disease, my colon doesn’t need any more instigation.
I was extremely disappointed by this news because I LOVED dairy, particularly cheese. So since the ban, I’ve been exploring vegan substitutes for cheese. Most of them tasted like melted rubber.
That is, until I discovered the brand Tofutti, which made my Thanksgiving dessert contribution possible.
Vegan Cherry Cheesecake
Thanks to Tofutti Cream Cheese and Tofutti Sour Cream, I made a delicious non-dairy cherry cheesecake on Thanksgiving eve. You can try out the recipe here!)
So I brought it to my grandparents’ house on Thanksgiving, unsure if it was going to be a hit or a total flop.
It turned out to be a wild success! Every slice was devoured and I was mildly disappointed that I’d have none to take home to eat alongside a leftover turkey sandwich.
But it was super exciting that even my family members who could eat dairy also loved the cheesecake—down to the very last crumb.
Even the Reddi Wip was non-dairy! It was creamy and delicious with a sweet coconut milk base. It paired very nicely with the cherry cheesecake. Reddi Wip also has an almond milk-based whipped cream that I’m equally obsessed with.
